![]() It took me 20 minutes to throw the ingredients for Comfort Chicken Soup into the crock pot, and another five to clean up. Now I’m back on the “deck” taking in the view. I’ve had what I’d rate as an A+ morning as far as the 3S’s (silence, solitude and simplicity) are concerned. Here’s how my day has gone so far: up at 5, for my usual early morning meditation routine, which as of yesterday now includes a half hour or so watching the sunrise. (Please bear with me as I post yet another picture. I’m obsessed.) I took care of a few emails, ate breakfast, and then…. at 9 the sun poured over the comfy chaise where I read, so……I just couldn’t resist taking a nap. Back to the Comfort Chicken Soup.--comfort food to eat and comfortably simple to make. Now I’m not against fancy recipes, but when I’m in my CBTS mood, I want simple. The point is to throw everything into the pot, turn on the heat and be done with it, except for savoring the aroma that fills the house. Today I threw in three pounds of chicken breasts, cut into small pieces, six diced carrots, three diced celery hearts, 8 ounces sliced mushrooms, one sliced onion, one quart chicken broth, salt and pepper to taste, and two teaspoons of tarragon. Later I will add cooked noodles.
